The kids on the structured good diet dropped an average of 30 points in their cholesterol lost 7 pounds and lowered CRP slept better felt better, concentrated better, etc.. I believe they were 20 yrs ago the first students in the country that were exposed to Food as medicine. As my reward, the IRS did three hard forensic audits in a row and they threw me out of the medical school they tried to force out Dr. campbell from giving a talk.It was because it disturbed Merc and Pfizer who had rat labs on the campus. I still hear from many of those students they’ve gone out to save many thousands of lives. That’s the reward.
Also, be aware that just because something is “Organic”, that does not mean that it is glyphosate-free. I had to search high and low to find Glyohosate-Free Oats.
I was diagnosed with celiac 7 years ago. Eggs have ALWAYS messed me up. I can't eat my own backyard chicken eggs, even when they're fed 100% organic diet, because the main ingredient is "organic" wheat.
HOWEVER, when I fed my chickens expensive wheat free organic chicken food, I could eat their eggs no problem at all! But I had to stop feeding it sheerly due to very high cost.
Eggs are a key ingredient in GF baking, but they cause similar symptoms as gluten intolerance for me (though not neurological symptoms like gluten does). GF vegan baking is usually a failure, but that's what I'm stuck with.
Not to be pessimistic, but imagine how many similar evolutions in agriculture & food processing must have occurred over recent decades that are causing other increasing disease states in the US & beyond. That likely won't change anytime soon. Plus the corporations involved aren't inclined to incriminate themselves & incur huge legal costs of liability. Nor is it in the self-interest of the medical field to research & track down suspected disease pathways. It's like everything militates against finding & rolling back such product/disease linkages. It seems to be built into how Western business operates, which is also understandable as to operate otherwise decreases competitiveness & increases necessary legal liability. It's horrifying how haphazardly integrated it can all be. And as morality recedes there's less inclination to investigate it all. A Gordian knot. This opened my eyes to how there's no single immoral or bad decision behind it all.
It all comes down to greed. American farmers allowed this to happen because of greed. They get subsidized and paid off and bought it.
We’re watching the same happen to the medical industrial complex. Greed for money is what drives most all evils. Look around… there are sell outs all around us. Look on FB.. They even brag about it via their fantastic life style choices, all the stuff they can buy, and places they get to go.
Do not envy these people, they’re greedy, miserable, and they want you to think differently.

After a lifetime of symptoms getting worse and worse, I was finally diagnosed with celiac. This theory would explain the "contamination" issue with oats. But why doesn't conventionally grown, glyphosate sprayed OATS cause me any celiac symptoms?
There must be overspray and/or false organic labeling. I was eating 100% certified organic, whole grain wheat when my celiac spiraled out of control. It almost killed me.
Why, when I tried twice to reintroduce organic whole grain wheat, did it instantly produce the same life-altering symptoms?
If I try again (GF for 7 years now), how can I trust the organic label? Maybe I'll have to grow the wheat and grind it myself to try it.

Yes! Mill your own organic wheat berries. I was diagnosed with celiac 7 years ago. I later learned from Sue Becker at Bread Beckers that it’s not the wheat. It’s the dead flour stripped of almost all nutrients in order to provide shelf life. Layer in the glyphosate and you have the perfect storm of poison! Check out her podcast, “ Sue’s Healthy Minutes” episode 2 for her excellent breakdown of the nutrional raping of store bought flour vs freshly milled flour.
I eat a certified organic, gluten free whole grains every day. My 3 favorites are teff, wild rice and millet.
However I haven't tried ancient gluten-containing grains like spelt. I recently learned that einkorn (ancient wheat relative) has far fewer gluten protein molecules and is easier for most people do digest. I'm too scared to try it. Maybe if it was certified organic, whole grain, and sourdough fermented I would eat it and see what happens.

I agree. Certified organic GF cookies or potato chips might be gluten free and vegan, but definitely not healthy. That's why I'm a small-scale farmer, growing real organic food myself. Might have to add grains to my farm.
When I developed 'supposed coeliac' ie violent allergy to wheat, my diet had been 100% organic for many years. I was reacting very clearly to organic and biodynamic wheat. Wheat is a highly stimulating food , like sesame.. certain foods can become too difficult to tolerate . I know whole communities of people who make their own artisanal organic bread but who have widespread wheat allergy/intolerance .. it's tough on our gut. Glyphosate is a serious issue for many folks but not for all by any means.
I often find myself coming at health stories from the 'other side' .My partner and I (and many of our friends) tried to get everything right with natural diet and location etc .. Ive learned about the various limitations of that approach . People often dont want to hear that the 'ideal' can go wrong so thanks for taking it so well . It may be down to heredity or specific lifestyle factors .. but i would definitely recommend dropping wheat if someone has digestion problems .. then reitroducing it gradually and carefully if they want to . Ive tried all sorts of therapies to reacquaint myself with it , as have many people I know. It's a tricky one !
Very hard to find non-contaminated food anywhere! All stuff in stores has additives, chemicals, and has been sprayed from start to finish! In the meanwhile 'wheat intolerance' has almost become a fashion thing! It used to be milk products and pork. (had that been diagnosed - turned out to be a chemical in my shampoo that caused the rash. Avoid gels!) Stores are now carrying all kinds of, IMO, tasteless stuff 'gluten' free.
Glyphosate also causes non-Hodgkins lymphoma. The means that glyphosate is not safe for humans. We are animals after all. The fact that Monsanto knows that glyphosate causes cancer, but has not divulged that indicates that Monsanto owners want us to die since the vast majority of people have no idea that there cures for cancer.

Humanity is assaulted in every which way, down to the food on our plate. Without the use of pesticides can food producers supply 8 billion people. What are the alternatives, something has to give.

I occasionally grind/mill organic wheatberries to make homemade bread, biscuits, etc. Even so, I could develop a bad reaction to it.

Glyphosate alone certainly does not explain why not all consumers get celiac disease or food intolerance issues.
I know a kid that got better after a colonoscopy because something was flushed out.
